Cranberry, Bacon and Chestnut Stuffing Balls

Festive stuffing bites for your Christmas dinner. Delicious and easy to prepare. Balls of dried cranberry, chestnuts and sausage meat, wrapped in streaky bacon!

Ingredients

Method

Drizzle olive oil into a saucepan and gently stir the onion for few minutes

Add Cranberries and Merlot and let them cook until the wine is absorbed

In a bowl mix together chestnuts, egg and sausage meat

Add the breadcrumbs, thyme and parsley and mix together

Mix in the cranberries and let it rest few minutes.

Roll the stuffing into 12 balls and wrap each one in 1 or 2 pieces of bacon

Add them into the roaster with some olive oil

Bake at 220C for  30-35 mins

Remove from the oven, serve and enjoy!
