Looking for a vegetable alternative which is both tasty and warming – then try our vegetarian casserole. We have used a hearty combination of carrots, courgettes, peppers, tomatoes and lentils, but this is one of those recipes that you can tweak as much as you like and will always taste great!
Soften garlic and onion to olive oil in a frying pan
Add the carrots and celery and soften
Stir in the peppers, along with thyme, cumin and smoked paprika
Into the casserole add the courgettes, lentils and vegetable mix
Mix together well and add the peeled cherry tomatoes before stirring again
Pour over the vegetable stock and add the lid to the casserole
Place in the oven for 1 hour 30 at 390F
