Salted Honey and Caramelised Apple Tart (v)

All contained within a smooth and flaky pastry base, this pie is stuffed full of cooked apples with a sweet filling, topped off with granules of sea salt for an added twist. A rich, bold dessert which can easily be served with cream,custard or ice cream.

Place pastry onto a pre-floured surface and roll out the pastry so to be large enough to cover the base and sides of the roaster

Place pastry over roaster and gently push down into the edges of the roaster

Cut off any excess pastry which drapes over the top

Using a fork, score the sides of the pastry

Place in the fridge for 30 mins

Peel and core the apples before slicing along the length in to eights


Melt honey and butter in a saucepan

Add in the apples and mix well and cook until the apples have softened


In a bowl mix together melted butter, sugar, salt, vinegar, vanilla extract and corn starch

Add in honey, egg and egg yolk, and cream, and mix together until a rich creamy color

Pour the mixture into the pastry and mix in the softened apples

Place in the oven for 40mins at 355F
