This dish could grace the table of any fine restaurant! The taste and aroma of molten goats cheese, combined with bacon and sweet potato will quickly fill the kitchen and awaken the taste buds. Serve with a full bodied red wine, and very soon both porcelain dish and bottle will be empty!
Place the bacon in a pan and gently cook through
Pour bacon out into a bowl
Then, using the same pan, cook the spinach and spring onion until the spinach has wilted
Add the spinach and spring onion into the bowl with the bacon, along with the 3 egg whites, 4 whole eggs, milk and half the cheese
Top with a pinch of salt and pepper and whisk together
To make the crust – add 1 egg white and flour to the grated sweet potato and mix together
Add a drizzle of olive oil to the base of the round roaster and add the sweet potato mixture
Compress the mixture to the bottom of roaster, and all along the edges too – tightly packing the potato together as possible
Place in the oven for 20-25 mins at 430F
Remove from the oven and pour in the mixture
Add in the remaining cheese
Place back in the oven at 355F for 35-40mins, until the centre is cooked through
