Fish Parmentier

So simple to make and such a pleasure to consume! Using a mixture of salmon, cod and prawns, in a dill infused sauce, covered with a generous layer of mashed potatoes and finished under the grill. Perhaps some peas to accompany and that is an excellent dinner served!

Method

Peel and chop the potatoes into small pieces

Place the chopped potatoes into a saucepan and will with cold water, and add a pinch of salt

Bring the pan to boil and cook for about 15-20 mins, until the potatoes are soft in the middle

Once ready, drain the water from the pan and add butter and milk, and mash all together

Melt butter in a frying pan

Add in the leeks and peas and grind black pepper over, and mix together – cook until soft

In a bowl mix together the crème fraiche, nutmeg and dill

In the oval roaster add the salmon, cod and prawns

Pour over the white wine and squeeze in half a lemon – then stir all together

Cover with metal foil and place in the oven for 15-20mins at 355F

Once out of the oven, remove the metal foil and stir in the leeks and peas, along with the crème fraîche mix

Cover evenly with mash potato and sprinkle on a generous topping of grated cheddar cheese

Place back in the oven for a further 15-20 mins at 355F
