This is indeed decadence in a ramekin. Wonderful aroma of molten chocolate mixed with baking, served hot and steaming, and the taste infused with Baileys. What a wonderful way to end a meal – or start an evening!
Lightly grease inside of the ramekins with butter
Add cocoa powder to each and rotate the ramekins until the inside is covered
Place in the fridge for 10 minutes
Upon a pan of boiling water, add heat-proof glass bowl to create a bain-marie. Allow for a space of 2-3cm between the surface of the water and the base of the bowl
Add butter and chocolate and allow to melt
In a bowl, add an egg plus the extra yolk and sugar and whisk together
Sift in the flour and add in the baking powder, Baileys and malted chocolate
Whisk all together
Pour mixture into the ramekins and place in the oven for 10mins at 390F
