Place the beef in a bowl and add the flour, plus a sprinkle of salt and pepper
Mix until the beef is coat in flour
Add olive oil to a frying pan and add the beef mix
Briefly cook the so to add color to each side- do not cook through
Remove from heat once lightly browned
In a separate pan add olive oil along with the pre-cut onion, celery and carrots
Cook until softened
Mix back in the beef
Add in the Worchester Sauce, sugar and English mustard and mix together
Then add the cans of chopped tomatoes and beer and mix together
Bring the dish to boil then remove from heat and pour into the casserole
Add and mix in the bay leaves and thyme
